Pumpkin Seed Granola

When the fun of carving a pumpkin is over, you may be wondering what to do with the huge amount of seeds and flesh you have hanging around. Instead of throwing them away, use them to make a healthy granola recipe that will keep you going all morning.

This is a recipe that adheres to the rules, while still being tasty enough to feel as though you’re breaking them!

Ingredients

  • All the seeds from your carved pumpkin
  • Pumpkin puree (to make your own quickly – chop a pumpkin and microwave for 7-10 minutes or until very soft, blend everything until it forms a puree – easy!)
  • 2 tbsp Hemp seeds (for crunch)
  • 2 tbsp shredded coconut
  • 2 cups barley flakes (or oat if barley is unavailable).
  • 2 tbsp flax seeds
  • 2 tbsp coconut oil
  • ¼ cup pure maple syrup
  • optional: natural vanilla extract and raisins for added sweetness

HOW TO

  • Pre-heat oven to 180C and line a baking tray with baking paper
  • Mix all ingredients together in a large bowl until well combined
  • Spread the mixture evenly across the baking tray and place in the oven for 15-20 minutes (check after 15 minutes to ensure nothing is burnt). Cooking times will vary and it may well take a little longer
  • You’ll know the granola has finished cooking when it is slightly browned and fills the house with a delicious smell
  • Remove from the oven and leave to cool – ideally, leave this to cool over-night in order for the granola to become crunchy

Sprinkle over yogurt or on top of a smoothie, or eat ½ a cup with your choice of milk, chopped banana and berries for breakfast.
